The establishment was creating a sanitizing solution by mixing chlorine bleach and detergent with water. Because the detergent and bleach react, the concentration of chlorine in the solution was impossible to determine. A new chlorine sanitizing solution was mixed. COS |

(C) As part of a cooking process if the FOOD that is frozen is:
(1) Cooked as specified under ¶3-401.11(A) or (B) or § 3-401.12, or
(2) Thawed in a microwave oven and immediately transferred to conventional cooking EQUIPMENT, with no interruption in the process; or
(D) Using any procedure if a portion of frozen READY-TO-EAT FOOD is thawed and prepared for immediate service in response to an individual CONSUMER'S order.
(E) REDUCED OXYGEN PACKAGED FISH that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment:
(1) Prior to its thawing under refrigeration as specified in(A) of this section; or
(2) Prior to, or Immediately upon completion of, its thawing using procedures specified in (B) of this section. Cases of frozen fish were stored on the drainboard of the 3-compartment sink to thaw. Thaw all products under refrigeration or using one of the above methods and maintain by the next routine inspection. |
